Hi friends! Just letting you know this breakfast cookie recipe originally published a few years ago, but we’ve recently tested and flourless option (with gluten free oats) and love it! Now we’re sharing it with you today, along with the original flour option and video.

A Breakfast Cookie Recipe Defined!

Two words.. BREAKFAST COOKIES. They belong together, right? But why? Other than the pure fact that I will wake up for breakfast cookies and coffee with much more enthusiasm than say, toast. Haha!

But what makes a breakfast cookie a breakfast cookie? This is a serious question. Is it because it’s healthier so you can justify eating cookies for breakfast? Is it that it’s portable or kid friendly? Is it that many breakfast cookies recipe are made with breakfast foods; ie.e banana or whole-grain oatmeal ? Is it that it contains fruit? Or should we just call it a healthyish cookie and be done with it.

If we were going by Wikipedia standards, a cookie can be defined as

“A cookie is a baked or cooked food that is small, flat and sweet. It usually contains flour, sugar and some type of oil or fat. It may include other ingredients such as raisins, oats, chocolate chips, nuts, etc. Wikipedia”

You see, this really doesn’t justify our answer.

Well my friends, we don’t have time to debate on whether these chocolate almond butter cookies or healthy breakfast cookies are really just cookies. But I do know this! They are gluten free, dairy free, paleo friendly, and refined sugar free. Either way, these cookies are made to nourish or enjoy ANYTIME of day! A breakfast on the go or midnight snack with milk….make that non dairy milk for me. 😉 milk.

Stay with me here, we are going to take this cookie definition to a whole new healthy level.

INGREDIENTS for healthy breakfast cookies:

  • dark chocolate
  • eggs
  • almond butter
  • molasses
  • banana
  • oat flour (or gluten free ground oats) or gluten free flour.

5 Ingredients that Make these Breakfast Cookies Healthy!

  • FIRST –> Banana. This is what’s going to replace the oil and some of the sugar. It’s rich in potassium, magnesium, plus it gives it that breakfast taste!
  • SECOND –> We have a gluten free starch. Tapioca or ground oats! Both rich in fiber and flourless!
  • THIRD –> One egg. You know for protein and such. Bonus: Rich in choline too!
  • And FOURTH–> Almond butter, obviously. Healthy fats and rich in Vitamin E
  • And FIFTH –> Molasses. Oh yea!! Plant based iron to boot! A natural sugar with a good source of minerals.

Then there is an option to leave these cookies plain, without the dip in dark chocolate. They turn out soft and taste similar to banana oatmeal cookies. Not a bad taste if you ask me. 😉

That being said, dark chocolate is healthy and contains loads of antioxidants. So chocolate for breakfast is totally allow. You’re welcome.

Description

Almond butter, bananas, eggs, and chocolate make a healthy breakfast cookie made with simple wholesome ingredients and unrefined natural sugars. Portable, easy, delicious!

Ingredients

Units Scale

  • 1 cup drippy almond butter
  • 1 egg
  • 1 ripe banana
  • cup tapioca flour or oat flour
  • ½ cup raw sugar or coconut palm sugar (see notes for substitutes)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • dash cinnamon
  • 1 Tablespoon maple syrup or molasses (optional but helps with keeping batter together and sweetness)
  • Optional – ½ cup dark chocolate chips, 1 teaspoon coconut oil and sparkling sugar

Instructions

  1. In a large bowl or stand mixer, combine the almond butter, egg, and banana until incorporated.
  2. Mix in the flour, sugar, baking powder, vanilla, salt and cinnamon.
  3. Fold in the maple syrup, if needed.
  4. Chill the batter in the fridge for 1-2 hours or freeze for 15-20 minutes. (see notes)
  5. Preheat oven to 350 F.
  6. After the dough hardens, scoop onto a lined baking sheet at least 2 inches apart as they cookies will spread.
  7. Press each cookie flat with a fork.
  8. Bake for 9-11 minutes or longer for crispier edges.
  9. Remove from the oven and let the cookies cool completely before removing them from the baking sheet. The bottoms will harden as they cool.
  10. As the cookies cool, melt the chocolate. In a small deep bowl, place the dark chocolate chips in microwave safe bowl and add the coconut oil. Heat in 30 second intervals until melted.
  11. When cookies are cooled, dip half of each cookie into the chocolate or drizzle the chocolate on top of the cookies. Place on lined pan or plate. If desire, sprinkle cookies with cinnamon, sparkling sugar, melted almond butter, or sea salt.
  12. Place the cookies in the fridge to cool the chocolate coating. Store at room temperature for up to 5 days in an airtight container.

Notes

Substitutes – Monk fruit sweetener can be substituted for the raw cane sugar but the baking texture/times might vary.

Baking Tip – Depending on the nut butter used, if the batter is too loose even after chilling, mix in 1-2 tablespoons more flour.
